How to make gulkand at home easily, using pink rose petals, honey and sugar candy. No cook recipe !

Today, let us make gulkand, which is a kind of jam made with the petals of light pink roses (called paneer roja in Tamil). It is very easy to prepare and needs only 3 ingredients. Gulkand is used to make gulkand paan, in milkshakes, ice creams or you can even eat it as it is. It is both tasty and healthy. Although you can buy packaged Gulkand easily in India, they are made excessively sweet, so they don't go stale easily. The quality of the ingredients and the hygiene while preparing them can also be dubious, if you don't buy it from a reliable source. Hence, I prefer making it at home, which helps me lessen the amount of sweetness if necessary. Gulkand is wonderful for a glowing skin and a healthy digestive system.

INGREDIENTS :
The ingredients needed for this recipe are:
500 gms - pink roses, or 100 gms of partly dried rose petals
100 gms - sugar candy
500 gms - pure raw honey
PROCEDURE :
Start by plucking the petals of 500 gms of roses.
Now, fill a large bowl with water and put handfuls of petals in it. Gently rub and swish them around. The dirt and pollen in the petals will settle at the bottom of the bowl. Continue this process with the rest of the petals. It is a good idea to wash the petals twice to remove all the dirt and pollen.
Spread the rose petals in a single layer on a large thickly folded cotton cloth. Let the petals dry, away from sunlight. They should not be completely dried, only partially, till the edges are slightly golden. This might take about 1 or 1 1/2 days. You might need to change the cloth once during this time. Once the petals have partially dried, they should weigh about a 100 gms.
Once the petals have dried, it's time to powder the ingredients. Grind the sugar candy in a mixie to get a fine powder. Transfer this to a bowl.
Grind the dried rose petals in the mixie till they are coarsely ground. Make sure to grind the petals in 2-3 batches, so that all the petals are ground evenly. Remove the ground petals in a bowl.
Finally, grind the petal mixture and sugar candy powder together for 10-15 secs, so that they are mixed well. Transfer this mixture to a clean airtight glass jar.
Pour honey into this jar little at a time and mix it well with the rest of the ingredients. Once you've poured all the honey in the jar, mix it well for a few minutes, so all of the ground petals are well coated with honey.
Cover the mouth of the jar with a clean cotton cloth and secure it with a rubber band. Keep it beside a window with indirect sunlight for about 15 days.
After these 15 days, the gulkand should be brown in colour and ready for use. You can then cover the jar with a lid instead of cloth.
This gulkand stays good for upto 6 months. You can keep it in a refrigerator to store for longer. Eat it as it is or you can include it in recipes like milkshake, barfi, gujiya, kheer, kulfi or even gulkand paan.
TIPS :
I used fresh roses for this recipe. But, you can use dried petals from the grocery store, if you want.
Alway dry the petals on a cotton cloth, as cotton clothes absorb the excess water easily when compared to other cloth materials.
Don't dry the petals under sunlight, even if you are in a hurry. Direct heat can kill the heat-sensitive micronutrients in the petals, and also cause the petals to lose their softness.
If you're using the gulkand in recipes, try to avoid cooking them, as heat can kill the wonderful properties of this healthy jam.

It is recommended to eat 1 tbsp of gulkand daily to improve digestion, cures constipation, detoxifies the body, purify blood, treats mouth ulcers, helps with menstrual problems, cools the body and get a glowing skin.
